The holidays can be a hectic time, but holiday meals don’t have to be hectic. Sit back and relax while this Orange Chicken cooks slow in the roasting oven, then make some Vegetable Fried Rice to pair with it for a great weeknight holiday meal for the family.
Yep, you guessed it, I was about to say the holidays are here and time is about to get hectic! I was looking at my calendar this morning and I already have something planned for every Friday and almost every Saturday this month. Some of my weeknights are even filling up with Boy Scouts and other family activities. Howard and I are eating better since his surgery and my upcoming surgery so we don’t want to go out or get fast food. We needed to come up with some holiday meals that will be easier than turkey or ham, but just as delicious. You know that Howard is the chef in our family so this is what he decided and Benjamin and I approved.
Orange Chicken is so easy to make and it has been one of my favorite meals of Howard’s since we met and I learned he was a chef. We decided to go with Cornish Hens for the chicken this time around because we are on this health kick and there are so many good reasons to go with the hens over regular chicken.
Cornish Hens do not have to be intimidating even though they sound fancy. They are cooked just like chicken, but you don’t have to take them apart before cooking the pieces. Plus, premium Cornish Hens are 100% All Natural with no added hormones or steroids and each hen is individually bagged to protect from frosting or freezer burn. There are no artificial ingredients and they are minimally processed. All in all, Cornish Hens are just a “better for you” option!
Orange Chicken made with Cornish Hens
What you’ll need:
2 Tyson® All Natural Premium Cornish Hen twin packs, split the hens in half
3 cups of orange flavored soda
2 tbsp chopped garlic
1 cup chopped green onions
1/2 cup soy sauce
1/2 cup honey
2 cups teriyaki sauce
What you’ll do:
Mix all ingredients in a roasting pan and add Cornish Hens. Roast for 3 hours at 350°. Once complete, feel free to grill on a stove-top grill pan for caramelization of the skin. Serve with vegetable fried rice and enjoy!
Vegetable Fried Rice
What you’ll need:
1 can baby corn
1 can water chestnuts
1-12 oz package stir-fry vegetables
2 cups calrose rice
2 tsp soy sauce
1 tbsp chopped garlic
1/2 green onions, chopped
4 eggs, scrambled
1 package fried rice seasoning
What you’ll do:
Heat a skillet or wok. Add 2 tbsp vegetable oil, chopped onions, chopped garlic, and rice. Stir for 2-3 minutes. Add eggs and vegetables. Cook for 3-4 minutes. Add soy sauce and seasoning. Stir and cook for 2 minutes. Serve and enjoy!
