Family movie night is a big deal in our family. We like to get prepared for all our favorite movies with a fun night of good food, activities, and watching other movies to prepare for the release of the new movies at home. Our latest obsession is with the 12/8/15 Blu-Ray/DVD release of Minions © 2015 Universal Studios. All rights reserved. Illumination Entertainment has done it again with this movie, featuring the minions from the Despicable Me franchise, and we are totally excited about this movie release!
We have been so excited about the Minions movie since before it was in the theater. We were there on opening night to get our tickets and laugh our faces off at those cute little yellow guys. The minions didn’t disappoint and we had a blast. Benjamin loves the minions so much that he was one for Halloween and Howard even got into the fun and dressed up as Gru (including the mask) so they could catch the eyes of all the trick-or-treaters on our street. So, of course when we heard that Minions was coming to Blu-Ray/DVD this month, we immediately began preparing for our fun family movie night.

You all know I don’t cook, so Howard volunteered to come up with the perfect dinner for our movie night. He was feeling the movie fever, too, and came up with Minions Rice Balls and Mediterranean Chicken and Chickpea Stew. Sounds like perfection, right? Well, he said I could share the recipe with you on the blog so here goes!
Minions Rice Balls
What you’ll need:
6 threads saffron
2 cups rice
4 cups water
What you’ll do:
Put rice, water, saffron, and salt/pepper to taste into a saucepan or pot and cook for 20 minutes or until liquid is absorbed. Form into balls and dress them up with black olives for the goggles and mouth. Serve and enjoy! If you want to cheat a little or you can’t find threads of saffron, you can use yellow rice that is found in packages at your local grocery store.
Mediterranean Chicken and Chickpea Stew
What you’ll need:
1/4 cup lemon juice
4 cloves garlic, chopped
1 1/2 lbs chicken breast, cut into 1 inch cubes
1/4 cup chopped flat parsley
1/2 tsp ground black pepper
1 tbsp kosher salt
1 tsp cumin
1 tsp onion powder
2 tbsp paprika
14 oz can chickpeas
15 oz can diced tomatoes
What you’ll do:
Saute all except chickpeas and tomatoes into 2 tbsp olive oil for 4 minutes. Add chickpeas and tomatoes. Stir, then cook at low for 10-15 minutes. Serve with rice and enjoy!
