Protein Packed Meals for the Man in the Kitchen from STOUFFER’S® Fit Kitchen

You all know that I’m not the cook in my family. I married a chef for a reason. But there are times when I have to cook and that’s when I break out my trusty quick and easy recipes or meals. Here is a new one that I’ve found that can easily be called the quickest and the easiest meal in my repertoire. This one is hearty enough to satisfy Howard and tasty enough to satisfy us both. Let me just tell you why I’m breaking out the easy meals now.
A little over a month ago, Howard hurt his knee while moving a box. He said that he felt a rip and then a warm sensation. After several doctor appointments and us fighting with the doctors that this was not arthritis, we finally convinced someone to order an MRI. Well, he has a torn meniscus and it needs surgery. My chef husband, who decides and prepares all of our meals, is about to have surgery (tomorrow!) and he’ll be down for the count for several weeks. I started thinking about what we were going to eat and while we could stand to lose weight, not eating because he’s down is just not an option. I have to come up with some crazy easy meals that are well-balanced, hearty enough for him, and something that all of us will eat.
That tall order is being filled with STOUFFER’S® Fit Kitchen meals. I mean these are crazy easy microwaveable meals that are ready in under 10 minutes. They are packed with protein (25g or more in every meal) and they are hearty and satisfying. Each of them have a touch of spice and flavor that makes it seem like Howard has been in the kitchen with his spice rack flavoring up these meals.
I picked up the meals in the freezer aisle near the “Meals”. You probably won’t find them under the single serve meals, but rather the larger family meals. Look for the STOUFFER’S® Fit Kitchen label on the boxes. You can find the meals in several varieties: Steak Fajita, Cilantro Lime Chicken, Rotisserie Seasoned Turkey, Bourbon Steak, Oven Roasted Chicken, and Monterey Chicken.
I loved the Cilantro Lime Chicken meal for me (white meat chicken with black bean and corn mix and seasoned brown rice with a verde tomatillo sauce) because I’m always craving chicken when Howard’s craving steak. The kick from the cilantro was perfect and the chicken was moist with big chunks of chicken and soft rice. I love black beans so the black bean and corn mix was perfect for me.
Howard enjoyed the Steak Fajita meal (tender prime rib steak in smoked red chile sauce with a mix of red and green peppers and seasoned brown rice) and agreed that this could be an easy weeknight meal that he could have again and again. It’s a good thing because I’m the “man in the kitchen” now for the next few weeks. Quick and easy is my style.

This looks out of this world! YUM!! I LOVE fajitas! I am all about healthy and quick meals! There are far too many non healthy meals out there. I hope you hubby healed well from the surgery!

I definitely do not get enough protein in my diet, so this sounds like a great way to get it in there. I will have to try these.
I have been wanting to try this for a quick, easy meal during the weeknight when I have no time! I typically cook every night, but sometimes you just want something to throw in the oven and have it ready in minutes.
