Now that the holidays are over and life needs to get back to normal, I’m thinking of meal planning and easy recipes that either Howard or I can fix for the family. I need quick and easy meal ideas to get our life back to balance in the evenings when we’ll be doing homework and soccer practice again, while also trying to stay away from eating out and ordering in fast food. I’ll be featuring a few more recipes this year to show you how we are eating and getting back on track, so today I have this dish to share with you – Sausage and Pepper Three Cheese Tortellini Salad with Sun-Dried Tomato Vinaigrette.
I say it all the time, but for those of you who are new around here, I’m not the chef in the kitchen. I married a chef for a reason. I had the worst palate (a word I never even used before meeting Howard) and all I wanted was bland or salty food with no spice or flavor to it. I have learned to try new things and get adventurous in the kitchen, but there’s just nothing better than getting a meal made for me by my chef husband.
Of course, at times I have a craving for something so I put Howard to the challenge. This week it was pasta, specifically Three cheese tortellini, and the best tortellini for a quick and easy meal solution is BUITONI® refrigerated pasta. The quality and fresh ingredients used to make this pasta is perfect for an everyday quick and easy meal.
I picked up some of the BUITONI® Three cheese tortellini and the other ingredients Howard would need to make an easy sausage and pepper tortellini salad with sun-dried tomato vinaigrette. It’s like a fancier play on spaghetti and meatballs, but just as easy! These tortellini are tender semolina pasta rings filled with three cheeses: fresh creamy ricotta, aged Parmesan and Romano, and they are perfect for a dish like this one.
Sun-dried Tomato Vinaigrette
What you’ll need:
7 oz sun-dried tomatoes in Olive Oil
2 tsp diced shallots
1/4 cup mustard
2 tbsp sugar
1/4 red wine vinegar
1 tsp dried basil leaves
2 cups grapeseed oil
Salt and pepper
What you’ll do:
Blend all ingredients until fully blended, then drizzle in 2 cups grapeseed oil. Salt and pepper to taste.
To put together the salad, you’ll want to cook some italian sausage links according to their package instructions. Boil the pasta, also according to the package instructions. Chop your orange and yellow bell peppers and red onions into small pieces. Combine your pasta and vinaigrette, along with the peppers and onions and mix until the pasta is coated. Serve in a salad bowl with slices of the italian sausage on top and season with salt and pepper according to taste. I personally didn’t need anything else after adding in the vinaigrette so taste it before adding anything extra.
Quick like spaghetti, but tasty like an italian restaurant. With dishes like this one, we can eat good and get our life back to balance after the holiday break. Now, I gotta run and get ready for school to start, soccer practice to pick back up, and get my house back in order!

I am no chef! If I am really hungry I will make a quick meat sauce (canned tomato sauce cook ground beef-95 % in the sauce. Boil up some spaghetti–pour sauce over cooked pasta and eat! Why I have never gotten tortellini I don’t know-I would probably love it!
