Parmesan Encrusted Tilapia with Puttanesca Sauce (recipe)
Howard and I are still trying to perfect this new routine with our boy now in Kindergarten, so this week, as part of a sponsored post for Collective Bias® , we tried a little menu planning and he made Parmesan Encrusted Tilapia with Puttanesca Sauce and Pasta…yummy!
I have to admit that we were not well prepared when it comes to the evening routine once our boy started Kindergarten. We are a “fly by the seat of your pants” type of family. We like to go places, do fun things, and just enjoy our time together.
Once Kindergarten started; however, things changed. Suddenly, we had to think about bedtime and routine, homework and packing lunches, and dinner…oh yeah, we should probably eat before 10pm, right?
In order to keep ourselves sane and our boy rested, Howard and I headed to Sam’s Club this week to pick up a few ingredients for meals to have on hand for nights when we didn’t plan well…or for some future menu planning efforts.
We bought Treasures from the Sea Parmesan Encrusted Tilapia, Hunt’s Tomato Sauce, and Daily Chef Spaghetti for a new meal that Howard wanted to create for us. He said I could reveal some of his secrets and the sauce recipe. Are you drooling yet?
First step and I got to help! I boiled the water with salt and oil and then added in the pasta. That is the extent of my help with the cooking. Yeah…I’m not one of those moms who cooks dinner every night. I married a former chef of 20 years for a reason.
For the Puttanesca Sauce, start by chopping onions and green peppers and combining that with shredded carrots and start a saute.
Add in anchovies, capers, and olives and saute for two minutes.
Add in the Hunt’s Tomato Sauce and let simmer for 20 minutes.
While the sauce is simmering, you will want to get the fish in the oven. Howard chose to brown the fish in a pan on the stove first so it would come out with an extra crunchy crust and then he cooked it in the oven according to the back of the package.
For the pasta, he tossed the cooked pasta in olive oil, kosher salt, and italian herbs.
And the finished product…AMAZING!
The boy and I shared the dish and we loved it. I was trying to explain to Howard how the Puttanesca Sauce made me feel and I felt as though I was in an authentic Italian restaurant with the warmth and family around. The boy kept grabbing food from my plate and his own so I think this is a meal that will make it into our menu planning often.

You really should try the Tilapia, so yummy! And of course, my husband’s sauce was amazing!
