Quick & Easy Weeknight Meals – Creamy Herb & Garlic Chicken Mac

If your family is anything like my family, you are B-U-S-Y! We are running from soccer practice on Monday to basketball practice on Tuesday, then soccer practice on Wednesday, Tyler on Thursday, basketball and soccer games on Saturday, and church on Sunday. In between, we have homework and blog work and baths and three dogs to care for and then there’s this little thing that gets put off until the last minute – dinner. Who has time to spend all evening in the kitchen when you’ve been away from your family all day and you just want a little quality time in between activities and homework?
You all know that I’m not the chef of the house, but I like to have a few things under my belt for the times when Howard isn’t feeling like cooking or when he has to work late. I have a few tried and true *ahem* spaghetti *ahem* meals, but I need a few more. Here’s where I’ll confess that Howard actually made this meal because he has the creativity to think it up, but he made sure that it was quick and easy so that I could make it any time.
Now, this may look like a lot of ingredients, but you can make it to taste with the different cheeses and topping. Let’s get started!
What you’ll need:
Fully cooked chicken breast (or you can cook your own, but that will add 30 minutes)
1 stick of butter
1 cup breadcrumbs
1 cup fish-shaped cheese crackers
1 box rotini pasta
1 bag cheddar cheese
1 bag mozzarella cheese
3 boxes of Campbell’s Soups for Easy Cooking (Creamy Herb and Garlic with Chicken Stock flavor)
What you’ll do:
Boil water and cook the pasta until done. Combine pasta, soup, chicken, butter, and cheeses in a bowl and mix. Pour mixture into casserole dish and cook on 350º for 20 minutes. Crush breadcrumbs and cheese crackers for topping once the casserole is cooked. Easy peasy!
The secret to the real flavor in this dish is definitely the Campbell’s Soup for Easy Cooking. Instead of needing all the seasonings and herbs and special ingredients that Howard would normally need for a meal on the weekend, we were able to get it all in one small box in the soup aisle.
