Cold and Rainy Days Call for Cheesy Chicken Tortilla Soup

It’s cold and rainy outside and I need something to warm my insides while also being delicious enough to serve others who may be visiting this time of year. This Cheesy Chicken Tortilla Soup that Howard made is sure to fit the bill. Come on in, warm up, and I’ll tell you all about it.
You know they say if you don’t like the weather in Texas, just wait a few minutes and it will change. While that is mostly true, the rain has been lingering since about Wednesday or Thursday and the cold showed up about halfway through Friday. It’s Monday and I’m feeling blue, I can’t get warm, and I need something wholesome to heat up my insides. Howard made this Chicken Tortilla Soup for us today and it is just what the “doctor” ordered.
This time of year is all about family, friends, and food and Howard has been cooking up some amazing dishes lately. He’s cooking desserts and casseroles and has opened up an online shop to take orders for the holidays. His food is just so amazing and I hope that one day he will get his restaurant that he so desperately wants. I think this small town we live in would really love his upscale comfort food the way that I do. But, for now, I’ll just have to keep testing out his food for him (I know, it’s a rough life) and sharing some of it with you guys from time to time.
Whether you’re feeding your family at home or preparing a holiday meal for others, this Chicken Tortilla Soup is sure to be a star. It’s not too difficult to make and it will wow your guests while warming their insides in this cold and/or rainy season.
Chicken Tortilla Soup
What you’ll need:
1 pablano pepper, diced
1 white onion, diced
1 carrot, shredded
2 stalks of celery, diced
4 chicken thighs
3 cans chopped tomatoes
2 tbsp chili powder
2 tsp cumin
1/2 tsp cayenne
2 tbsp black pepper
2 tbsp kosher salt
2 quarts chicken broth
1 tbsp chopped garlic
1/4 chopped cilantro
Juice of 4 limes
Garnish with:
Tortilla strips
Sour cream
Avocado
24 oz. package of Kraft Natural Shredded Cheese, Mexican
What you’ll do:
Saute all veggies. Add canned chopped tomatoes and raw chicken. Combine all except cilantro and garnish items in a pot and cook on low for 4 1/2 hours. When done, add cilantro. Garnish with tortilla strips, sour cream, avocado, and of course, lots of cheese!
You probably noticed that we only use Kraft Natural Shredded Cheese in our recipes because it is the best, of course. It is a “better for you” option when shopping for the toppings for your soup. We found all of the ingredients we needed at our local Walmart.
Now that you know Howard’s recipe for Chicken Tortilla Soup, you can warm up and eat great like I do during this cold and rainy weather. You can invite your guests inside for something satisfying and warm during the holidays.

I have never tried tortilla soup before but it sounds amazing. I would replace the chicken with Quorn as I am a vegetarian.
