Howard and I are back at it and stronger than ever with our healthy eating. You can look forward to some healthy recipe ideas in the coming weeks and months. I’m not sure that I’m quite ready to start back up with my Fatty Friday posts, but you will be reading more and more about what we are eating. Last night we were especially hungry because we ate lighter than usual on Sunday, but we needed something that was quick & easy, but healthy. Enter the Easy Peasy Taco Salad!
While Howard is the main chef around our house, even I can make this recipe. I didn’t. But I could!
What you’ll need:
2 bags of salad (your choice, we used a salad blend with cabbage and carrots mixed with iceberg lettuce)
8 oz package of shredded cheese
2 lbs ground beef (or ground turkey)
What you’ll do:
Brown the ground meat and season according to the taco seasoning package. In a large bowl, empty your bags of salad and top with salsa and shredded cheese (you probably won’t use the whole bag of cheese or use as much as you prefer). Top with taco meat and sliced avocado. See, easy peasy! Serves 3-4 (or two hungry folks!).
Since we are semi-new to this healthy eating again, we have been looking for new recipes to try.
