For as long as I can remember, I have always loved Diet Coke. I think I remember being a pre-teen when I was introduced to soda, in general, and I would drink one a day. As an adult, and as someone who doesn’t sleep well, I need caffeine to keep me going during they day, and Diet Coke is my drink of choice. I don’t drink coffee often because it hurts my stomach so the first drink I reach for in the morning is an ice cold Diet Coke. There’s just nothing quite like it to get me going and keep me going throughout the day.
I was in Walmart this past weekend and there was this fun lady giving out Cokes as a demo and I just had to stop and talk to her. She gave me a coke and told me about these coke products that have names on them. The idea is to get a free coke and then find one with your friend’s name on it and share a Coke with a friend. I had a few ideas of what I wanted to do so I started looking through the endcap that was filled with Coke, Diet Coke, and Coke Zero bottles to find a few of my friends’ names.
Side story – Do you remember back in the early 90’s when Coke had a promotion where you saved the can tops and traded them in for prizes? I remember spending a lot of time at my grandparent’s house and saving up TONS of those tops and getting the coolest black sunglasses. What fun! Also, do you save up the bottle caps and codes and trade them in online to get special prizes. I have a gagillion tops that I need to enter and I just need to set aside some time to get that done. Anyway…
I also found these 20-packs for Coke with generic names on them that I thought would be fun for coworkers or a coke float party. But, I had something else in mind that I wanted to do and I really wanted to incorporate Diet Coke since I’m pretty darn loyal to my DC. I was excited to see that the generic names were on the Diet Coke cans as well and they were on Rollback for $3 last weekend. I should have picked up more than one 12-pack! I knew I wanted to do something for my coworkers so I had a little more shopping to do.
You see, since I started doing my current job with Child Protective Services, I have always worked with a unit of investigators that are four hours away from my office. I don’t get to see them often and it is difficult to stay connected. Also, since I don’t technically work with the units in my office, it is difficult to stay connected with them as well. I often feel like I’m a little on my own.
Recently; however, my area of coverage has changed and one of the units that I work with is right here in my own city, in my own office! I knew I wanted to do something special for them for welcoming me in the mix so quickly, so I decided to make them a Diet Cherry Coke gelatin salad and Share a Coke with my coworkers!
So, last night I put all the ingredients together and made my very first gelatin salad all by myself! You all know I’m not the cook in the family and I certainly am not a dessert maker in the family. When I go to pot luck dinners, I usually buy something or Howard will make it, but this was a special occasion and I wanted to do it on my own. It was so easy to make and if it goes over well, I will be making it again, definitely. I might even try other flavors and mix it up a little. If you make it and love it, I would love to know. Diet Cherry Coke Gelatin Salad
2 cans dark sweet cherries
1 can pineapple chunks
1 can Diet Coke
4-5 boxes (0.3 oz) sugar-free gelatin
Pour the cherries, juice and all, in a sauce pan and bring to a boil. Take off the heat and add gelatin. Stir. Add in pineapple chunks and full can of Diet Coke. Stir. Add mixture to a gelatin mold or oiled glass bowl. Chill overnight or until gelatin is set. Top with Light whipped cream. Enjoy and #ShareaCoke with a friend!
Do you drain the juice from pineapple?
